Big White Ski Resort Revives a Culinary Icon: The Return of the Kettle Valley Steakhouse
The Kettle Valley Steakhouse, a staple of the resort’s food and beverage scene, is set to reopen its doors in mid-December 2025, offering a refreshed yet familiar experience for both longtime fans and new guests.
For years, one question has echoed among guests and locals alike: When is the Steakhouse coming back? According to Trevor Hanna, Big White’s VP of Hospitality, that consistent demand played a major role in the decision to revive the restaurant.
“Since its closure in March of 2020, the number one question we hear every year from both local and destination guests is—when will the Steakhouse re-open?” says Hanna.
Solving the Space and Staffing Challenge
The answer, until now, had been tied to a practical challenge—accommodation.
“Up until this season, the main concern was the lack of staff accommodation required to house the additional employees,” Hanna explains. “With that problem now solved, it paved the way to conceive a new, reimagined space.”
The revived Kettle Valley will maintain its classic steakhouse charm, bringing back signature dishes like the Tomahawk Steak and the Seafood Tower, while embracing modern updates to its design and guest experience.
Reimagined Design Meets Culinary Tradition
In collaboration with Hatch Interior Design, Big White is reimagining the restaurant space upstairs in the Happy Valley Day Lodge, bringing a fresh, contemporary aesthetic that honors its classic roots. Guests can look forward to a thoughtfully redesigned layout featuring:
- A new guest arrival experience
- Dedicated washrooms
- An enhanced feature bar
- Improved kitchen service integration
- A custom-commissioned harvest table designed to host large parties in style
“We wanted to modernize the space while keeping the essence of what made the Steakhouse so memorable,” says Hanna. “That balance of classic and contemporary will be felt in every detail.”
What to Expect from the New Kettle Valley Experience
The heart of Kettle Valley has always been its food—and that legacy continues. Guests can look forward to a classic steakhouse menu, featuring Certified Angus Beef, complemented by an array of à la carte sides.
Seafood lovers won’t be left out either. The restaurant remains committed to sustainable sourcing through the Ocean Wise program, ensuring a rich selection for seafood towers and fresh feature fish dishes.
From the first pour to the final toast, the beverage experience at the new Kettle Valley Steakhouse has also been designed to complement the elevated dining atmosphere.
“Whether you’re here for a handcrafted cocktail and conversation with a skilled mixologist, a pampered family dinner during a holiday getaway, or a quiet meal at your favorite table as a regular—our goal is to offer a tailored, upscale dining experience that feels personal,” Hanna shares.
Wines to Match the Moment
One of Kettle Valley’s most celebrated features was its wine list, and it's coming back better than ever.
“The wine list will be a healthy mix of Okanagan and international wines,” says Hanna. “We’ll highlight iconic local producers but also introduce guests to hidden gems from lesser-known regions that deliver great value and incredible quality.”
Expect the return of magnums and large-format bottles, a guest favorite and the perfect centerpiece for celebration dinners or long, luxurious evenings.
