Flammachs, Bratwursts and Quark Donuts: European food comes to Big White
The new Toasty Treehouse brings the Après-ski experience from European Winter Resorts right here to the Big White Ski Resort Village. The German and Finnish-inspired cuisine complements the kaleidoscope of culinary culture that already exists at Big White.
The feature dish, “Flammlachs”, is a traditional salmon recipe from Finland. Preparing Flammlachs involves slow-roasting a whole salmon fillet over an open fire. The salmon is rubbed with a unique blend of spices, mounted on a Finnish maplewood plank, then roasted to perfection.
Served hot off the plank on a European-style bun, with a healthy drizzle of a “signature” cream sauce, makes this Flammlachs dish burst with flavour. It’s sure to be the new favourite comfort food of boarders, skiers and winter enthusiasts alike.
To please the meat lovers on the Hill, the Toasty Treehouse also offers Authentic BBQ’d German Bratwursts, with all the trimmings.
For hot beverages to warm up, try the Swiss Hot Chocolate with Baileys and the traditional Gluhwein, the go-to favorite across Europe – better known as mulled wine in Canada.
Of course, it wouldn’t be “Apres Ski” without a cozy licensed beer garden serving beer on tap and a little European influence to warm you from the inside out - Schnapps. (Warning - try not to consume too many before heading out on the slopes!)
For those with a sweet tooth, you're also in luck - you'll be able to enjoy freshly basked “Quark Donuts”, a specialty found in German bakeries.
Diners at the Toasty Treehouse can choose to sit in the beer garden or hang out in the warm Flammach hut to watch the salmon cook over the open fire.
